A whole vanilla pod is roughly equivalent to 1/2 teaspoon of pure vanilla powder, or 1 teaspoon of homemade vanilla extract. For a classic recipe (custard, flan, cake) serving 4 to 6 people, count on 1 pod, 1/2 teaspoon of powder, or 1 to 2 teaspoons of extract depending on how long it has steeped. These equivalences let you swap one vanilla format for another without throwing off a recipe.

Why does the vanilla dosage vary so much depending on the format?

Whole pod, ground powder or liquid extract don't contain the same vanillin concentration per gram, nor do they release their aroma the same way. The pod gradually releases its aromas during infusion, the powder acts instantly in a dry mix, and the extract brings both vanillin and alcohol. A good dosage takes these differences into account to avoid a result that's either too subtle or overwhelming.

Dosage by type of preparation

Can you use too much vanilla?

Yes: beyond a certain point, vanillin turns bitter rather than round. This is especially true with alcoholic extract, where excess can also bring a residual alcohol taste if the preparation isn't cooked. It's better to dose gradually and taste as you go, especially with a Gourmet vanilla whose essential oil concentration is high.
